We stock two local milks: cow’s milk and goat’s milk as well as a kefir milk from Co Leitrim.
All of our milk is non-homogenised and full fat. Put very simply, homogenising milk disperses the fat evenly throughout the milk, so that the cream does not sit on top. It also decreases the size of the fat particles overall. Leaving the milk as non-homgenised allows the cream to sit on top, and lets the milk keep its lovely creamy colour.
Fairfield Farm from Caim, near Enniscorthy is a delicious full fat, non-homogenised cow’s milk. It’s for sale in 2 litre cartons for €2.50.
Meadowfield Farm supply us with a full fat, non-homogenised goat’s milk from their own family herd. Meadowfield are based in Screen, Co Wexford and their goat’s milk won a Great Taste Award in 2017.
Our kefir milk comes from Blakes Always Organic, Drumshanbo, Co. Leitrim. It is made from organic milk sourced locally from farms within the North-west of Ireland. Kefir grains are added to the organic cow’s milk.
Tinnock Farms provide us with local country butter. The butter is hand made and uses only full-fat Irish cream with less than 1% sea salt added.
